Hi,

First post here, but since chick pea recipes are popping up, and they are my go to place for quick, filling, healthy meals that leave leftovers, I thought I'd post one. I have many, but this is what I made tonight and can remember off the top of my head while holding a sleeping baby.

1 tsp cumin seeds
2 Tbs veg or olive oil

Cook seeds for a minute or two until brown.

Add to the seeds and oil:
1/2 tsp salt
1/2 tsp chili powder
1/2 tsp lemon pepper

Stir, then add 2 diced tomatoes (or 1 15 oz can diced tomatoes)

Stir occasionally, let the sauce thicken a bit (I usually let it cook for several minutes while opening chick pea cans and cutting up onions).

Add 2 15oz cans chick peas, stir.

1 Tbs of lemon juice, stir in.

Add 1 onion, diced.

Cook until the onion and chick peas are soft. Stir frequently. This takes 15-20 min.

Overall, this takes about 30-40 min to make. You can easily double or more the batch, and it tastes better the next day (heat with a moist paper towel on top if microwaving, otherwise the chick peas get hard).

Aha! That's what I'd have done, but every so often you run into a recipe that wants you just to dump the entire can in. Thank you!
