I've been meaning to post this for two weeks.

2 lbs. ground venison or beef
1 lb frozen corn
1 orange bell pepper
1 yellow bell pepper
1 jar mild salsa
1lb bag shredded taco cheese
1/4 bag cheap tortilla chips
3 green onions
minced onion

powdered garlic
cumin
chili powder
paprika
crushed red pepper

Directions:

Brown meat in skillet with minced onion (or fresh) thrown in, about an eighth of a cup? Whatever looks good.

About halfway through browning, if the meat is not overly greasy, add either a package of taco seasoning, or whatever combination of the above spice list smells good to you. Sorry, I honestly don't have a better guestimate. There are lots of recipes for taco seasoning out there.

Once the meat is done browning, and you have drained it if necessary (add spices after draining, if it needed draining), throw chopped bell peppers and and another couple of green onions into the skillet and toss them around for a bit.

In an 8"x13" baking dish, lay a layer of chips as thick as you happen to want into the bottom.

Into either your skillet, or a larger mixing bowl, add one jar salsa and one bag frozen corn to the meat and peppers, add 1/2 to 2/3 of the bag of cheese, mix will.

Press half of meat et all over the chips, lay in another layer of chips, press in the other half of the mixture, cover with the rest of the cheese.

Bake at 350F for 20 minutes, pull, allow to cool.

This made lunches for two people for 5 days, and it was as good the last day as the first. You could do a third layer of chips if you wanted, but we didn't think it was necessary.
